About 10 minutes to mix the spices and prepare the chicken, then 20-25 minutes in the air fryer and a 5-minute rest. Total = 10 min active + 30 min hands-off. If your air fryer asks you to preheat, that happens while you season the chicken.

Scaling? Only cook as many thighs as fit in one layer with space around each one. For more, cook in batches rather than stacking them; the time per batch stays the same. Some items (like eggs) don’t halve neatly: beat them, then measure out half.
Ingredients
You need: air fryer with a basket (about 6-litre / 6-quart; a 3.5-litre basket fits 4 thighs only if they don't touch) · metal skewer · paper towels · small bowl · tongs · instant-read thermometer
Contains: none of the 9 major allergens in the listed ingredients
Method
Mix the spice rub
In a small bowl, mix 3/4 tsp smoked paprika, 1/2 tsp salt, and 1/4 tsp each of sugar, pepper, cayenne, cumin, coriander and granulated garlic.
Prick, dry and season
Poke the skin of each of the 4 thighs 10 to 15 times with a metal skewer. Pat them dry with paper towels and rub the spice mix all over. Wash your hands after handling the raw chicken.
Air-fry
Put the thighs in the basket skin side up, spaced apart so they don't touch. Set the air fryer to 190°C (375°F) and cook for 20 to 25 minutes. Halfway through, turn the pieces around in the basket but keep them skin side up.
Ready when: The skin is well browned and crisp. A thermometer in the thickest part (not touching the bone) must read at least 74°C (165°F) to be safe; for the most tender thigh meat, keep going until it reaches about 85°C (185°F).
Otto tried this firstOtto squeezes six thighs into a basket built for four, all touching. The skin stays pale and flabby. He cooks them in two batches with space around each piece.Rest and serve
Move the chicken to a plate with tongs and let it rest for 5 minutes before serving.
Swaps
- Instead of the spice rub: 4 tsp Chesapeake-style seafood seasoning, rubbed all over Cook exactly the same way.
- Instead of plain thighs: toss the hot cooked thighs with barbecue or buffalo sauce Toss them while they're still hot.
Make ahead, store & reheat
- Storage
- Refrigerate leftovers within 2 hours and eat within 3 to 4 days. Frozen plain cooked chicken pieces keep best quality for up to 4 months.
- Reheat
- Reheat until steaming hot and 74°C (165°F) in the thickest part.
If something goes wrong
- Pale, soft skin Why: The thighs were touching or stacked, or the skin wasn't dried and pricked.
Pat the skin dry, prick it 10-15 times, and leave space around every piece; cook in batches if needed. - Some thighs done, others not Why: Very different sizes.
Buy thighs of a similar size, and take out each piece only when it reaches at least 74°C (165°F).
Good to know
- Pricking the skin lets the fat underneath render out, which helps it brown and crisp.
- Air fryers run differently. Watch the colour and check the temperature rather than trusting the clock, especially the first time with a new machine.
Safety
- Chicken must reach at least 74°C (165°F) in the thickest part, away from the bone. Check every thigh.
- The air fryer basket and the fat that collects in it get very hot. Pull the basket out slowly, set it on a heatproof surface, and keep kids away; an adult should handle the basket.
- Follow your air fryer's manual for preheating, maximum fill and where to place it (keep it away from walls and cupboards while it runs).
- Keep raw chicken away from other food; wash hands, the bowl and the skewer in hot, soapy water.
